After completing his chemical engineering degree, and industrial experience in the polymer/petrochemical field in Taiwan, Bih-King Chen obtained his MASc degree in oilseed processing under the direction of Drs. Diosady and Rubin in the Department of Chemical Engineering and Applied Chemistry, University of Toronto. He remained in the food engineering program and is the Senior Research Associate in the Food Engineering Program in the University of Toronto. He has more than 20 years of experience in process design. He has led pilot plant scale up projects in cooperation with the POS Pilot Plant Corporation, Saskatoon (protein, oil, starch pilot plant), the Guelph Food Technology Center, Texas A&M University Protein Technology Center, and Land-o-Lakes RTech Research Laboratories in Wisconsin. He manages the Food Engineering laboratory’s daily operations and is involved both in research and scale-up of food fortification projects.
